At the heart of Texas Wine Country is Fredericksburg and the Texas Hill Country AVA (American Viticultural Area), it is the second largest certified Viticultural Area in America with well over nine million acres. Inside this region are over 50 wineries, vineyards and tasting rooms producing some of the best vino that Texas has to offer.
Gather around from near and far - a story is about to be told...
A phoenix has risen and now resides just due west of Hye, Texas - sitting atop a stone castle admiring the Hill Country and vineyards below. I hear a tale of the castle overflowing with wines from old Europe to new world Napa with custom blends finishing in the dungeon chambers. We have searched Europe high and low to partner with wine craftsmen for our secret cellar selection. A local chef will be preparing a wonderful array of epicurean delights for pairing with our featured wines. Rumor has it that there will even be a dungeon tasting experience. The 290 Wine Castle at Chateau de Chasse was established by Mike and Monique Chase to fulfill the promise of a growing season of life - care, friendship and fellowship.
In the end, our story, our purpose, is to provide you, the king and queen for the day, with the backdrop and the experience to create your epic tale. Come by and enjoy an afternoon of fine wines and food while luxuriating in the 360 view of the Texas Hill Country surrounding the castle grounds. From Rocks to Wine...
Even as childhood sweethearts we have always had a common goal, and this vineyard and winery is our latest vision come to life. We purchased our 180-acre ranch while living in Scotland, and our time there inspired the name Torr Na Lochs, which loosely translates from Gaelic to Hill Over Lakes. The winery sits high above the Colorado River valley overlooking both Inks and Buchanan lakes.
It was on a wine tour in Australia that we noticed the similarities between the vineyards there and our ranch property, and the idea for the vineyard and winery was born. Two years of weekends preparing the vineyard culminated with the planting of our first three acres of vines in April 2014. Winery construction started shortly thereafter, and the tasting room opened in September 2015.
After making the leisurely half-mile drive along a granite gravel road to the winery building, choose from a number of seating options for tasting great Texas wines with an even greater Texas view. As native Texans, we are committed to wines made from only Texas grown fruit. We invite you to relax and enjoy the variety of Torr Na Lochs wines poured at your table by our friendly staff.

Soon after its independence, both the Signors and Weisingers became residents of Texas.
The Signor family traces its residency back five generations or more throughout Central and West Texas. In 1949, Lee F. Signor (grandfather of Clay) moved his wife and five children from his family home in Abilene to Montgomery County to live on the Teas Nursery Ranch, north of Conroe. As grandchildren of Edward Teas (horticulturist and founder of Houston's oldest nursery, est. 1910), Clay's father Charles and his identical twin brother Jim often enjoyed sharing memories of going with their parents to Teas Nursery and riding the tractor down Bellaire Boulevard when it was still made of seashells.
The Weisingers came to Texas in 1852 from Georgia. They settled in Montgomery County and established a small community called Ryles, Texas. The family developed the surrounding land for agriculture and ranching over the next century.
The Signors and Weisingers first became friends in the 1950's when Lee F. Signor purchased land from Melvin Weisinger. That land bordered John Weisinger Sr.'s property. Over the following decade, the Signors and Weisingers would share farm equipment, feed each others cattle and dwell as neighbors and friends.
Lee Signor and his wife Ruth had identical twin sons, Charles and Jim, two daughters, Josephine and Silvia, and a younger son Rusty. John Weisinger Sr. had two children, John Jr. and Sarah. John Jr. and Silvia were only a year apart in age. John still remarks that it was the ever-outgoing Silvia who taught him to dance. She would come over to the Weisingers ranch, put on a jitterbug record and teach John a routine. The highlight of this endeavor for John was going to a school dance and having Silvia come over and say, “OK let's show them what we can do!” John and Silvia danced the routine they’d rehearsed and his friends were thoroughly surprised and impressed.
As John grew older he enjoyed time spent with the Signor twins, Charles and Jim who, following their West Texas roots, spent much of their time riding and roping in the local rodeos. John would take his horse down to the Signors roping pen and the twins helped John to learn to rope from his horse. That friendship continued between the three until the passing of the twins in 2014 and 2016.
In 2014, John Weisinger (who first learned to make wine from the wild grapes that grew along the very same creek that ran through both the Signor and Weisinger properties) was approached by Charles's son Clay to consult with him about building a vineyard and winery. John, who had been in the wine business in Oregon since 1987, agreed and brought his son, Eric, who grew up in the business at The Weisinger Family Vineyard in Oregon to help as well.
The two family histories continue as the third generation, Eric Weisinger and Clay Signor, have now come together as friends and winemakers.
The mutually exclusive skills of both men have contributed to what you are enjoying at Signor Vineyards today. Continuing the Signor legacy, Clay's passion for horticulture, architecture and ranching, along with his attention to detail have combined with Eric's talent for producing world-class handcrafted wines (having traveled to California, Australia, and New Zealand to expand his wine making skills). The result is what makes Signor Vineyards a unique wine experience. Three generations of friendship has shown us the value of an extended family. And it’s with this in heart that we invite you to become part of our extended winery family.

The Swahili word "safari" means "journey", and this is where the name "Safari Winery" derived from.
We are a family owned winery who settled in Fredericksburg, Texas during the mid 1800s. We have been here for 6 generations. We love this town, and it is still the only place we have ever considered "home".
Although Fredericksburg is where we grew up, we have always enjoyed traveling to different places. It is something that has brought our family closer together and continues to do so throughout the years. We decided to build this winery in hopes to bring something new and special to you and your loved ones, and what better way to do that than to bring wines from different parts of the world right to you! We hope our wines can help bring people closer together and be a constant reminder of what life is all about!
